The San Marzano tomato of Sarnese-Nocerino (DOP) in Italy is a variety of tomatoes recognized as a protected Italian designation. The legend tells that the first tomato seed of San Marzano arrived in Campania in 1770, as a gift from the Viceroy of Peru to the King of Naples. It was planted in the area corresponding to the present municipality of San Marzano sul Sarno, where it graced well due to the fertility of volcanic soil. Its characteristics (compact and fleshy, slightly watery and with a few seeds) make it very suitable for a quick cooking that allows you to preserve a more lively flavor in tomato sauce
